– 4-5 large russet potatoes, peeled and cut into chunks
– 3 tablespoons of olive oil
– 4 cloves of garlic, minced
– 1 teaspoon of paprika
– 1 teaspoon of dried oregano
– Salt and pepper, to taste


1. Preheat the oven: Preheat your oven to 400°F (200°C).

2. Prepare the chicken: In a small bowl, combine the minced garlic, olive oil, thyme, rosemary, salt, and pepper to create a paste. Rub the garlic herb paste all over the chicken, making sure to coat it evenly, including under the skin.
