1 1/2 cups graham cracker crumbs
1/4 cup unsalted butter, melted
1/4 cup sugar
2 packages (8 ounces each) cream cheese, softened
1/3 cup sugar
1 teaspoon vanilla extract
1 cup heavy cream

Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press into the bottom of a 9-inch springform pan. Chill in the refrigerator for 30 minutes.
In a large bowl, beat cream cheese, 1/3 cup sugar, and vanilla extract until smooth.
In another bowl, whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
Spread the filling over the crust in the pan. Chill in the refrigerator for at least 4 hours, or overnight.
Before serving, remove from springform pan and garnish with your choice of fruits, if desired.
