These Apple Pie Enchiladas Are Ridiculously Good

 

Baked Apple Pie Enchiladas are loaded with all the cinnamony goodness and deliciousness of hot apple pie, but you can stuff them into a tortilla. Then drizzled with caramel sauce…

Ingredients:

• Homemade Apple Pie Filling or 1 (21 ounce) can apple pie filling

• 6 (8 inch) flour tortillas

• 1 teaspoon ground cinnamon

• 1/2 cup butter

• 1/2 cup white sugar

• 1/2 cup brown sugar

• 1/2 cup water

Instructions:

Preheat oven to 350°F. Butter a 9 x 13 inch baking dish.

If necessary, soften the tortillas in a microwave to make them easier for rolling.

Sprinkle 1/4 cup of the pie filling onto each tortilla. Place the tortillas seam-side down in a greased baking pan.

Bring butter, sugar, brown sugar, and water to boil in a large saucepan. Reduce heat to medium and simmer for three minutes, stirring continuously.

Sauce over enchiladas. Sprinkle extra cinnamon if desired. Let stand for 45 minutes.

Bake in a preheated oven for 20 minutes or until golden. Serve warm with vanilla or whipped cream. Top with the desired amount of caramel sauce.
