Stuffed Bell Peppers Recipe

Ingredients:

• 4 large bell peppers (any color)
• 1 lb ground beef (or turkey, chicken, or plant-based protein)
• 1 cup cooked rice (white or brown)
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1 can (14.5 oz) diced tomatoes, drained
• 1 tsp Italian seasoning
• 1/2 tsp paprika
• Salt and pepper to taste
• 1 cup shredded mozzarella cheese (or cheese of your choice)
• 2 tbsp olive oil
• Fresh parsley, chopped (for garnish)

Instructions:

1. Prepare the Peppers:
Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Brush the insides with a little olive oil and place them in a baking dish. Set aside.
2. Cook the Filling:
Heat olive oil in a large pan over medium heat. Add the chopped onions and cook for about 3-4 minutes until softened. Add the minced garlic and cook for another minute.
3. Brown the Meat:
Add the ground beef to the pan and cook until browned, breaking it up as it cooks. Drain any excess fat.
4. Add Seasonings and Rice:
Stir in the drained diced tomatoes, cooked rice, Italian seasoning, paprika, salt, and pepper. Let everything simmer together for about 5 minutes, allowing the flavors to combine.
5. Stuff the Peppers:
Spoon the filling mixture into each bell pepper, pressing down slightly to ensure they’re well-filled. Top each stuffed pepper with shredded mozzarella cheese.
6. Bake:
Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
7. Garnish and Serve:
Remove from the oven, garnish with freshly chopped parsley, and serve!
