INGREDIENTS:

  • 2 large cucumbers, thinly sliced.
  • 1 large red onion, thinly sliced.
  • 3 large tomatoes, diced.
  • 1/4 Cup.Of fresh parsley, chopped (optional, for garnish).
  • Salt and pepper to taste.

FOR THE DRESSING:

  • 1/4 Cup.Of olive oil.
  • 2 Tbsp.Of red wine vinegar.
  • 1 Tbsp.Of lemon juice.
  • 1 Tsp.Of honey (optional).
  • 2 cloves garlic, minced.
  • 1 Tsp.Of dried oregano.
  • Salt and pepper to taste.

INSTRUCTIONS:

 

  1. Prepare the vegetables: Wash the cucumbers, tomatoes, and red onion thoroughly. Slice the cucumbers and red onion thinly and dice the tomatoes into bite-sized pieces. Place them in a large mixing bowl.
  2. Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, honey (if using), minced garlic, dried oregano, salt, and pepper until well combined.
  3. Marinate the vegetables: Pour the dressing over the sliced cucumbers, onion, and diced tomatoes in the mixing bowl. Toss gently to coat the vegetables evenly with the dressing.
