  1. Prepare the vegetables: Wash the cucumbers, tomatoes, and red onion thoroughly. Slice the cucumbers and red onion thinly and dice the tomatoes into bite-sized pieces. Place them in a large mixing bowl.
  2. Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, honey (if using), minced garlic, dried oregano, salt, and pepper until well combined.
  3. Marinate the vegetables: Pour the dressing over the sliced cucumbers, onion, and diced tomatoes in the mixing bowl. Toss gently to coat the vegetables evenly with the dressing. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.
  4. Garnish and serve: Just before serving, give the salad a final toss to redistribute the dressing. Taste and adjust the seasoning with salt and pepper if necessary. Sprinkle chopped parsley over the top for a fresh burst of flavor and vibrant color. Serve chilled as a refreshing side dish alongside your favorite main course.

  • For added freshness, you can add other vegetables such as bell peppers or thinly sliced radishes to the salad.
  • Feel free to customize the dressing to suit your taste preferences. You can adjust the amount of vinegar, lemon juice, or honey to achieve the perfect balance of tanginess and sweetness.
  • This salad is best served chilled, so make sure to refrigerate it for at least 30 minutes before serving to allow the flavors to develop.
