Mozzarella Stuffed Rosemary Parmesan Soft Pretzels

Ingredients

For the Dough:

•1 ½ cups warm water (110°F/43°C)

•2 ¼ tsp active dry yeast (1 packet)

•1 tbsp granulated sugar

•1 tsp salt

•4 cups all-purpose flour

•2 tbsp unsalted butter, melted

For the Filling:

•8 mozzarella cheese sticks (or 8 ounces of mozzarella cut into sticks)

For the Baking Soda Bath:

•10 cups water

•2/3 cup baking soda

For the Topping:

•1 tbsp fresh rosemary, finely chopped

•½ cup grated Parmesan cheese

•1 tbsp coarse sea salt

•2 tbsp melted butter (for brushing after baking)

Instructions

1.Prepare the Dough:

•In a large mixing bowl, combine warm water, yeast, and sugar. Let it sit for 5 minutes until foamy.

•Add the salt, melted butter, and flour gradually, mixing until a soft dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic.

•Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.

2.Preheat the Oven:

•Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper and lightly grease them.

3.Divide and Shape the Dough:

•Punch down the dough and divide it into 8 equal portions. Roll each portion into a 12-inch rope. Flatten the rope slightly, place a mozzarella stick in the center, and wrap the dough around the cheese, sealing the edges tightly to prevent leaks.

4.Prepare the Baking Soda Bath:

•In a large pot, bring 10 cups of water to a boil. Slowly add the baking soda (it will bubble up).

•Using a slotted spoon, dip each pretzel into the boiling baking soda bath for 30 seconds. Place them back on the prepared baking sheets.

5.Add Toppings:

•Sprinkle each pretzel with rosemary, grated Parmesan, and coarse sea salt.

6.Bake the Pretzels:

•Bake for 12-15 minutes, or until the pretzels are golden brown.

7.Brush with Butter and Serve:

•Remove the pretzels from the oven and immediately brush them with melted butter. Serve warm for the ultimate gooey, cheesy experience!
