**Texas Cowboy Stew**
**Ingredients:**
– 1 lb ground beef
– 1 lb smoked sausage, sliced
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 4 cups beef broth
– 1 can (15 oz) diced tomatoes with green chilies
– 1 can (15 oz) pinto beans, drained and rinsed
– 1 can (15 oz) corn, drained
– 2 large potatoes, peeled and diced
– 1 tablespoon chili powder
– 1 teaspoon cumin
– Salt and pepper to taste
**Instructions:**
1. In a large pot, brown the ground beef over medium heat until fully cooked, breaking it up as it cooks. Drain any excess fat.
2. Add the sliced sausage to the pot and cook for 3-4 minutes until slightly browned.
3. Stir in the chopped onion and garlic, cooking until the onion becomes translucent.
4. Add the beef broth, diced tomatoes with green chilies, pinto beans, corn, and potatoes to the pot. Stir to combine.
5. Season with chili powder, cumin, salt, and pepper. Bring the stew to a boil.
6. Reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes, or until the potatoes are tender.
