Snowball Cookies
These powdered sugar-coated cookies melt in your mouth and have a light, buttery flavor. Perfect for sharing during the holidays or enjoying with a cup of coffee.
Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar (plus more for rolling)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup finely chopped pecans or walnuts (optional)
Pinch of salt
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Make the Dough: In a large bowl, beat the softened butter and powdered sugar until light and fluffy. Add vanilla extract and a pinch of salt, then mix in the flour until the dough forms. Stir in the chopped nuts, if using.
Shape the Cookies: Roll the dough into 1-inch balls and place them on the prepared baking sheet about 1 inch apart.
Bake: Bake for 12-15 minutes, or until the cookies are set and just starting to lightly brown at the bottom. Let them cool for a few minutes on the baking sheet.
Coat with Sugar: While the cookies are still warm, roll them in powdered sugar to coat. For an extra snowy look, roll them again in powdered sugar once they are completely cool.
