Mediterranean Grilled Cheese Sandwich π₯ͺπ π§
Ingredients:
β’ 1 cup fresh spinach leaves, chopped
β’ Β½ cup shredded mozzarella cheese
β’ 2 tablespoons crumbled feta cheese
β’ 2 tablespoons ricotta cheese
β’ 2 tablespoons sun-dried tomatoes, drained and chopped
β’ 1 tablespoon sliced black or Kalamata olives
β’ 4 slices whole grain or sourdough bread
β’ 2 tablespoons butter, softened
Instructions:
1. Wilt the Spinach:
β¦ Place the chopped spinach in a microwave-safe bowl.
β¦ Microwave on high for about 45 seconds, until wilted.
2. Prepare the Filling:
β¦ To the wilted spinach, add mozzarella, feta, ricotta, sun-dried tomatoes, and olives.
β¦ Mix until well combined.
3. Assemble the Sandwiches:
β¦ Spread the cheese and spinach mixture evenly onto two slices of bread.
β¦ Top each with the remaining bread slices.
β¦ Butter the outer sides of each sandwich.
4. Grill the Sandwiches:
β¦ Heat a skillet over medium-low heat.
β¦ Place the sandwiches in the skillet, buttered side down.
β¦ Cook until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
β¦ Press gently with a spatula while cooking for even grilling.
5. Serve:
β¦ Remove from skillet, slice in half, and serve immediately.
