Ingredients:

•4 large yellow onions, thinly sliced

•3 tbsp unsalted butter

Instructions:

1.Caramelize the Onions

•In a large pot, melt the butter and olive oil over medium heat.

•Add the sliced onions and stir to coat. Cook for 15–20 minutes, stirring occasionally.

•Add the sugar and continue to cook, stirring more frequently, until the onions are deep golden brown (about 30–40 minutes).

2.Add Garlic and Deglaze

•Stir in the minced garlic and cook for 1 minute.

•Add the wine to deglaze the pot, scraping up any brown bits at the bottom. Let the wine reduce for 2–3 minutes.

3.Simmer the Soup

•Add the broth, bay leaf, thyme, salt, and pepper.

•Bring to a simmer and cook for 20–30 minutes. Taste and adjust seasoning if needed.

4.Prepare the Baguette

•Preheat the oven to 400°F (200°C).

•Place the baguette slices on a baking sheet and toast until lightly golden.
