Chicken Patties with Mozzarella Recipe

Ingredients
•1 lb (450g) ground chicken
•1/2 cup breadcrumbs (panko or regular)
•1/4 cup grated Parmesan cheese
•1 large egg
•2 garlic cloves, minced
•1 tsp onion powder
•1 tsp paprika
•1/2 tsp salt (or to taste)
•1/2 tsp black pepper
•1/4 cup fresh parsley, chopped (or 1 tsp dried parsley)
•4 oz (115g) mozzarella cheese, cut into small cubes
•2 tbsp olive oil (for frying)
Instructions
1.Prepare the Chicken Mixture:
In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, egg, garlic, onion powder, paprika, salt, pepper, and parsley. Mix well until all ingredients are fully incorporated.
2.Shape the Patties:
Take a small portion of the chicken mixture (about 2-3 tablespoons) and flatten it in your hand. Place a cube of mozzarella in the center, then fold the mixture around it to form a ball. Flatten slightly into a patty shape. Repeat with the remaining mixture and cheese.
3.Cook the Patties:
Heat olive oil in a large skillet over medium heat. Add the patties to the skillet, ensuring they’re not overcrowded. Cook for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
4.Serve:
