Ingredients:
•2 tablespoons olive oil
•1 large onion, diced
•2 cloves garlic, minced
•2 carrots, sliced
•2 celery stalks, sliced
•1 zucchini, diced
•1 bell pepper, diced (any color)
•1 large potato, diced
•1 cup green beans, chopped
•1 can (14.5 oz) diced tomatoes, with juice
•6 cups vegetable broth
•1 teaspoon dried thyme
•1 teaspoon dried basil
•1/2 teaspoon dried oregano
•Salt and pepper, to taste
•2 cups fresh spinach or kale
•1/4 cup chopped fresh parsley (optional)

Instructions:
