Chicken Parmesan Recipe

Ingredients:

• 4 boneless, skinless chicken breasts
• 1 cup breadcrumbs (Italian seasoned or plain)
• 1/2 cup grated Parmesan cheese
• 1 tsp garlic powder
• 1 tsp dried oregano
• 2 large eggs
• 1 cup marinara sauce (store-bought or homemade)
• 1 1/2 cups shredded mozzarella cheese
• 1/4 cup all-purpose flour
• Salt and pepper, to taste
• 2 tbsp olive oil
• Fresh basil or parsley, chopped (for garnish)
• Spaghetti or other pasta, for serving (optional)

Instructions:

1. Prepare the Chicken:
Preheat the oven to 375°F (190°C). Pound the chicken breasts to an even thickness (about 1/2 inch) to ensure even cooking. Season both sides with salt and pepper.
2. Set up the Breading Station:
• Place the flour in one shallow dish.
• In another dish, whisk the eggs.
• In a third dish, mix the breadcrumbs, grated Parmesan, garlic powder, and oregano.
3. Bread the Chicken:
Dredge each chicken breast in the flour, shaking off any excess. Dip it into the beaten eggs, and then coat it in the breadcrumb mixture, pressing down to ensure it’s evenly coated.
4. Cook the Chicken:
Heat olive oil in a large skillet over medium heat. Add the breaded chicken breasts and cook for about 3-4 minutes on each side, until golden brown and crispy (the chicken doesn’t need to be fully cooked at this point, as it will finish cooking in the oven).
5. Assemble and Bake:
Place the browned chicken breasts in a baking dish. Spoon marinara sauce over each piece, then sprinkle mozzarella cheese on top. Bake in the preheated oven for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
6. Garnish and Serve:
Garnish with fresh basil or parsley. Serve the chicken Parmesan on its own, or over a bed of spaghetti for a complete meal.
