ingredients:

• 1 1/2 cups all-purpose flour

• 3 1/2 tsp baking powder

• 1 tbsp sugar

• 1/2 tsp salt

• 1 1/4 cups milk

• 1 egg

• 3 tbsp melted butter

• 1 tsp vanilla extract (optional)

instructions:

1. mix dry ingredients: in a large bowl, whisk together the flour, baking powder, sugar, and salt.

2. mix wet ingredients: in another bowl, beat the egg, then add the milk, melted butter, and vanilla extract. mix well.

3. combine: slowly pour the wet ingredients into the dry ingredients. stir until just combined—don’t overmix! the batter should be slightly lumpy.

4. preheat pan: heat a non-stick skillet or griddle over medium heat. lightly grease with butter or cooking spray.

5. cook pancakes: pour about 1/4 cup of batter onto the pan. cook until bubbles form on the surface and the edges look set (about 2 minutes). flip and cook the other side for another 1-2 minutes until golden brown.
