Here’s a simple and authentic Italian pasta recipe for Spaghetti Aglio e Olio (Garlic and Olive Oil Pasta):

Ingredients:

•Spaghetti: 400g

•Garlic: 6-8 cloves, thinly sliced

•Extra Virgin Olive Oil: 1/4 cup

•Red Chili Flakes: 1 tsp (adjust to taste)

•Parsley: Fresh, chopped (2 tbsp)

•Parmesan Cheese (optional): Grated, for garnish

•Salt: To taste

•Black Pepper: Freshly ground, to taste

Instructions:

1.Cook the Pasta:

•Boil a large pot of salted water.

•Add the spaghetti and cook until al dente (check the package instructions).

•Reserve 1 cup of pasta water before draining the spaghetti.

2.Prepare the Garlic and Oil Sauce:

•Heat the olive oil in a large pan over medium heat.

•Add the sliced garlic and sauté until golden brown (not burnt). This infuses the oil with garlic flavor.

•Stir in the red chili flakes and cook for 30 seconds.

3.Combine Pasta with Sauce:

•Add the drained spaghetti to the pan with the garlic oil.

•Toss well to coat the pasta evenly in the flavored oil.

•If the pasta seems dry, add a splash of the reserved pasta water to loosen it.

4.Season and Garnish:

•Add salt and freshly ground black pepper to taste.

•Toss in chopped parsley for a fresh, herby kick.

5.Serve:

•Plate the pasta and, if desired, sprinkle with grated Parmesan cheese.

Tips:

•For extra flavor, add anchovies or capers when sautéing the garlic.

•Serve with crusty bread and a side salad for a complete meal.
