Peanut Butter Chocolate Swirl Blondies
Ingredients:
• 1 cup (2 sticks) unsalted butter, melted
• 1 1/2 cups light brown sugar, packed
• 1/2 cup granulated sugar
• 2 large eggs
• 2 tsp vanilla extract
• 2 cups all-purpose flour
• 1/2 tsp baking powder
• 1/2 tsp salt
• 1/2 cup creamy peanut butter (for the swirl)
• 1/2 cup chocolate chips or melted chocolate (for the swirl)
• 1 cup mini peanut butter cups (chopped)
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
2. Prepare the Blondie Batter:
In a large mixing bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, mixing until well combined.
Sift in the flour, baking powder, and salt, and fold until just combined.
3. Add the Peanut Butter Cups:
Gently fold in half of the chopped peanut butter cups into the batter. Spread the batter evenly in the prepared baking pan.
4. Create the Swirl:
Warm the peanut butter and chocolate chips (separately) in the microwave until smooth. Drizzle the peanut butter and melted chocolate over the batter, then use a knife or skewer to swirl them together.
5. Bake:
Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
6. Top with Peanut Butter Cups:
As soon as the blondies come out of the oven, press the remaining peanut butter cups on top for a decorative finish.
7. Cool and Serve:
Let the blondies cool completely before slicing into squares.
