My Extra Cheesy Meatballs
Simmered in my Rustic Sauce exploding with cheesy goodness this recipe is gonna make you very happy.
For the meatballs you’ll need-
•1.5-lbs 80/20 ground chuck
•1/2-lb ground pork
•1/2-cup onion minced
•4-garlic cloves minced
•1/2-cup plain bread crumbs
•2-large eggs beaten
•1/2-cup fresh basil minced or one
tablespoon dry basil
•1/2-cup grated Parmesan
•1-cup Provolone shredded
•1/2-cup shredded mozzarella
•1-tsp red pepper flakes

1-add all the ingredients to a bowl and mix together with your hands do not over work the meat
2-roll golf balls size meatballs here is a meatball pro tip rub some olive oil on your hands first 😉
3-pre heat the oven to 400 degrees
4-place them on a baking sheet
5-into the oven for 15 minutes just to brown them, they will finish cooking in the sauce

Sauce
You’ll need-
•3-28oz. can whole plum tomatoes
•1/2-cup fresh basil
•2-tbs extra virgin olive oil
•2-garlic cloves chopped
•1-tsp salt
•1/2-cup water

1-Crush the tomatoes with your hands
2-In a large skillet or pot add the olive oil and garlic put the heat on medium
3-Once the garlic turns light golden
add the tomatoes, water, basil, salt and allow this to cook for 15 minutes on a medium heat, stirring along the way.

Finishing the meatballs in the sauce
1-place the meatballs in the sauce
2-put a lid on and put the heat to a low simmer for 20 minutes
3-remove the lid and carefully turn the meatballs in the sauce, continue to braise the meatballs for 30 minutes un covered turning every 10 minutes.

Perfect for your favorite pasta, sub sandwich or simply enjoy in a bowl with sauce and a chunk of Italian bread, that is my favorite way meatball.
