Loaded Double Cheeseburger with Bacon and Grilled Veggies 🍔🧀🥓

Ingredients:

1 lb ground beef (80/20 for juiciness)
Salt and pepper to taste
4 slices cheddar cheese
6 slices crispy bacon
2 brioche burger buns
2 tablespoons mayonnaise
2 tablespoons butter (for toasting the buns)
1 large dill pickle, sliced
1 green bell pepper, sliced
1 small red onion, sliced
1 tablespoon olive oil
1/4 cup burger sauce (see below)
For the burger sauce (optional):

1/4 cup mayonnaise
1 tablespoon ketchup
1 teaspoon mustard
1 teaspoon pickle relish
1/4 teaspoon garlic powder
1/4 teaspoon smoked paprika
Instructions:

1️⃣ Prepare the veggies:
In a skillet, heat olive oil over medium heat. Add the sliced bell pepper and red onion, sautéing until soft and slightly charred, about 6-7 minutes. Set aside.

2️⃣ Prepare the patties:
Divide the ground beef into 4 equal portions and form thin patties. Season with salt and pepper on both sides.

3️⃣ Cook the bacon:
In the same skillet (or on a grill), cook the bacon until crispy. Drain on paper towels and set aside.

4️⃣ Cook the patties:
In the same skillet or on a grill, cook the patties over medium-high heat for about 3-4 minutes per side. During the last minute of cooking, add a slice of cheddar cheese on top of each patty and allow it to melt.

5️⃣ Toast the buns:
Spread butter on the inside of the brioche buns and toast them in the skillet until golden and crispy.

6️⃣ Assemble the burger:
Spread a tablespoon of mayonnaise on the bottom bun. Add pickles, one patty with cheese, two slices of bacon, another patty with cheese, and the sautéed veggies. Drizzle with burger sauce (if using) and cover with the top bun.

7️⃣ Serve:
Enjoy your loaded double cheeseburger with fries or your favorite side!

Notes:

For extra heat, add sliced jalapeños or hot sauce to the burger sauce.
You can swap cheddar with pepper jack or your favorite cheese for a twist.
