Grilled Beef Skewers with Chimichurri Sauce: A Summer Classic

Ingredients:
1 1/2 lbs beef sirloin or ribeye, cut into 1-inch cubes
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
Salt and black pepper to taste
Wooden skewers, soaked in water
1 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped (optional)
4 garlic cloves, minced
1/3 cup olive oil
2 tbsp red wine vinegar
1 tsp red chili flakes (adjust to taste)
Salt and pepper to taste

Directions:
Toss the beef cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Let it marinate for at least 20 minutes. In a bowl, mix parsley, cilantro, garlic, olive oil, red wine vinegar, chili flakes, salt, and pepper to make the chimichurri sauce. Stir well and let the flavors meld while preparing the skewers. Thread the marinated beef cubes onto the soaked skewers, leaving a little space between each piece for even cooking. Heat the grill to medium-high. Grill the skewers for 2-3 minutes per side for medium-rare, or cook to your desired doneness. Drizzle the fresh chimichurri sauce over the hot skewers or serve it on the side for dipping.
