French Onion Meatloaf with Melted Swiss
This Crockpot French Onion Meatloaf is a total comfort food upgrade! Tender beef slow-cooked with caramelized onions and Swiss cheese, giving you all the cozy flavors of French onion soup in meatloaf form! A melt-in-your-mouth meal that’s perfect for a cold night!
Ingredients:
1 lb ground beef
1 cup breadcrumbs
1 egg
1 packet French onion soup mix
1/2 cup caramelized onions
1 cup shredded Swiss cheese
1/4 cup beef broth
2 tbsp Worcestershire sauce
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Mix the Meatloaf: In a large bowl, combine the ground beef, breadcrumbs, egg, French onion soup mix, and a dash of salt and pepper. Mix until well incorporated. Form into a loaf shape.
Slow Cook: Place the meatloaf into your crockpot. Add caramelized onions on top. Pour beef broth and Worcestershire sauce around the loaf.
Cook Low and Slow: Cook on low for 6-7 hours, or until the meatloaf is cooked through.
Cheesy Finish: During the last 10 minutes of cooking, sprinkle shredded Swiss cheese on top of the meatloaf. Let it melt and become gooey!
Serve: Garnish with fresh parsley and serve with mashed potatoes or your favorite side.
